Description

Hillside Brewery was launched in 2014 on a stunning 40-acre farm, where we converted the old dairy info a micro-brewery at Holly Bush Farm, off the A40, in the Forest of Dean, Gloucestershire.

We are passionate about real ale and the importance of supporting and using the best local ingredients.

“The water we use is our own bore hole water and comes from 200 feet below the farm. Sample testing has shown the water is far purer than tap water and doesn’t have the chemicals that yeast doesn’t like!”

"The majority of our hops we use are sourced from 18 miles away, from our door to Townend Farm in Bosbury, Herefordshire. These hops are grown by the fantastic Mark Andrews who is one of the best hop growers in the UK. 

The microbrewery has a 6-barrel capacity which means that brewing twice a week can produce 2000 litres. 

“This is our passion and I wouldn’t compromise quality for the sake of getting bigger, all of the beer we send out is in prime condition - for the perfect beer”.

We are passionate about beer, our aim is to make real ales to be proud of that are distinctive, brewed consistently and served within the Forest and Gloucestershire. We would also love to become one of the go-to destinations in Gloucestershire with the range of activities and events we offer on site. 

There are six main Hillside Ales plus small batch craft specials, seasonal and celebration brews. They take their names from the character and legends of Holly Bush Farm.

  • Legend of Hillside (4.7% ABV) – a rich, clear, English Indian Pale Ale with a strong hop finish - just how it should be. 
  • Legless Cow (4.2% ABV) – a hand crafted Best Bitter with lots of character and a distinctive fruity hop finish. The name comes from seeing the cows ‘totter’ slightly after smelling the aroma’s from the Copper!
  • Summit (4.9% ABV) - this is a real winter warmer with rich caramel and toffee flavours. 
  • Pinnacle (3.8% ABV) - this Pale Ale has a complex fruity flavour which will leave you wanting more.  
  • Over the Hill (3.5% ABV) - this Dark Mild is full bodied, with a roasted coffee finish. 
  • HCL: Hillside Craft Lager (4.3% ABV) - we brew an unfiltered and unfined lager, which has flavours of peach and honey - that's right... a lager with some flavour!

Visit the brewery Monday-Friday 9am - 17.00pm.

Take the A40 from Ross-on-Wye towards Gloucester. Holly Bush Farm is 8 miles from Ross. We are approx. 1.5 miles after passing the Farmers Boy pub on the left and Nags Head on the right. Keep on the A40 (ignore sign to Longhope on the right). After about a mile you will see a turning to May Hill and Clifford Mesne on the left. Keep on the A40 and the farm is approx. 100m further on the right. The driveway shares an entrance with a house called Stratville which faces the road. (A detached red brick and cream house) There is a gate a short way along the drive. Go through the gate and up the drive to the farm. The brewery is on the left of the barns at the top of the hill.
